Puff Pastry Strawberry Cream Cake

Ingredients:
For the Puff Pastry Layers:
1 pack of puff pastry dough (about 10-12 pieces)
For the Cream Filling:
1 pack of whipped cream powder
1 cup of milk
200 ml heavy cream
2 tablespoons powdered sugar (optional)
For the Strawberry Filling:
2 cups fresh strawberries (chopped)
1 tablespoon granulated sugar (optional)
For the Top:
Sliced strawberries
Powdered sugar (optional)
Instructions:
Prepare the Puff Pastry: Remove the puff pastry sheets from the fridge and let them sit at room temperature for a few minutes. Place each pastry sheet on a baking tray. Bake at 180°C (350°F) for 12-15 minutes or until golden brown. Once done, take them out of the oven and let them cool.
Prepare the Cream Filling: In a bowl, combine the whipped cream powder and milk. Whisk until the cream thickens. Then, add the heavy cream and whisk for a few more minutes. You can add powdered sugar for extra sweetness, if desired.
Prepare the Strawberries: Wash and chop the strawberries. Place them in a bowl and sprinkle with 1 tablespoon of sugar (optional) to bring out their juices. Let them sit for a while to mix with the sugar.
Assemble the Cake: Carefully cut the puff pastry sheets in half. Place the first puff pastry layer on a serving plate and spread some of the cream mixture over it.
Add the Strawberries: Spread the chopped strawberries on top of the cream layer.
Add the Second Puff Pastry Layer: Place the second puff pastry layer over the strawberry and cream layers. Spread the remaining cream mixture on top and smooth it out. Decorate with sliced strawberries on the top.
Chill: Refrigerate the cake for at least 2 hours, preferably overnight. This will allow the puff pastry to soften and the flavors to meld.
Serve: Once chilled, slice and serve the cake cold. You can sprinkle powdered sugar on top for an extra touch.
